ingredients

  • 1 (14 ounce) can beef broth
  • 1 (14 1/2 ounce) can diced tomatoes with onion and garlic or (14 1/2 ounce) can Italian-style stewed tomatoes
  • 1 12 cups water
  • 12 teaspoon italian seasoning, crushed
  • 8 ounces packages frozen italian style cooked meatballs, or your own from the freezer,about 8
  • 12 cup small dry pasta, such as ditalini or 1/2 cup orzo pasta (elbows are ok)
  • 1 cup loose pack, frozen mixed vegetables
  • 1 tablespoon finely shredded parmesan cheese or 1 tablespoon grated parmesan cheese

directions

  • Stir together beef broth, undrained tomatoes, the water and Italian seasoning in a large saucepan, bring to boiling.
  • Add meatballs, pasta and frozen veggies.
  • Return to boiling, reduce heat.
  • Simmer covered, about 10 minutes or till pasta and veggies are tender.
  • Ladle soup into bowls and sprinkle with cheese.

  1. This is an awesome recipe. I made it yesterday and it just keeps getting better. I used Morningstar Farms veggie meatballs and it turned out perfect. The parmesan cheese makes it extra special. This is a definite keeper.

  2. Delicious! I subbed cannellini beans for the pasta and added a small, chopped zucchini, but followed the rest of the recipe. It was amazing!

  3. Easy, healthy, and delicious. This is for sure going into the rotation. My husband who is very picky and generally only likes things that are fatty, fried, covered in cheese, or super high in calories really liked it (score!). I did add a tiny bit of garlic salt for a little more flavor and increased the number of meatballs, otherwise I stuck to the recipe and it worked out in my favor.

  4. This is like a minestrone with meatballs!! It really was easy & fast to put together. I used my own meatballs, but used around 10 of them. I used low sodium chicken broth & added 1/4 tsp oregano. I think next time I'll add some salt & pepper just for extra flavor. I used whole wheat elbows & simmer time was about 8 minutes. I also sauteed some chopped onion & garlic before adding everything else. I might add a can of white beans next time to add more fiber!

  5. I really loved this soup. It is easy to make and very flavorful. I will definitely make again. I added a can of beans to increase the fiber and make it a really complete meal. I just realized I forgot to sprinkle the parmesan. Can't wait to try it with the cheese.

  1. 1.Better then beef broth roast by flavor and added a lol extra 2. Added extra seasonning garlic powder, salt, pepper & oregeno 3. Used petite tomatoes with oregeno,basil ,onion 4. A lil spaghetti sauce at the end 5. Extra meatballs

  2. I tweaked this for a prep-ahead meal with frozen ingredients. Then I fixed it in a crockpot using frozen stock, meatballs, and my own frozen, chopped vegetables: carrots, peas, celery. I put the frozen cubes of broth on the bottom, 1.5 c orzo pasta, spices, meatballs and vegetables over that, and 1.5 c water, (boiled to help thaw frozen stock). 3h on high.

  3. Delicious soup! I used organic beef broth instead of using the can broth and water. I used the Ditalini pasta. I also used a deluxe stir-fry frozen veggies that had Italian green beans, broccoli, little corn cobs, & red peppers. I think any frozen veggie combo will work great in this recipe. I had frozen meatballs in my freezer (kittencal's recipe) that I added to it, and served some cheese bread along side of it. It was fast & easy to make and very delicious. Thanks Derf, for the good recipe! I'll be making this again.
