This Bisquick strawberry shortcake is a simple and easy-to-prepare treat is perfect for summertime! Tender biscuits are layered with fresh strawberries and whipped topping for an irresistible dessert the whole family will enjoy! It only needs a few staple baking ingredients and comes together in a snap, so you won't have to spend much time in the kitchen!

Original Bisquick Strawberry Shortcake

Strawberry shortcake could easily be my favorite summertime dessert. Of course, I already have my classic strawberry shortcake recipe on the site (as well as some yummy strawberry shortcake cookie cups!)

This Bisquick version is essentially the simplest and quickest way to enjoy some strawberry shortcake. In fact, this is the original recipe that you could find on the back of the box of the baking mix!

🥘 Bisquick Strawberry Shortcake Ingredients

Using Bisquick really cuts down on the ingredient list - you'll only need 6 items! Of course, you can whip up some homemade whipped cream, but to keep everything extra simple, I'm noting store-bought here.

  • Strawberries - 4 cups of strawberries that have the stems removed and are sliced. You'll want to use fresh strawberries for this and not frozen ones.
  • Sugar - ½ cup of granulated sugar for coating the macerated strawberries. This will draw out the moisture and create a sweet and fruity syrup. You will also need another 3 tablespoons of sugar to make the biscuits.
  • Bisquick - 2⅓ cups of original Bisquick™ baking mix.
  • Milk - ⅔ cups of milk. I used whole milk, but you can use your preferred type for baking.
  • Butter - 3 tablespoons of melted butter.
  • Whipped Cream - An 8-ounce container of whipped cream, thawed. Using store-bought makes this recipe very simple, but you can try out my homemade whipped cream recipe, too, if you like!

🔪 How To Make Bisquick Strawberry Shortcake

This recipe is about as easy as it gets; you don't even need an electric mixer! Instead, you'll want two mixing bowls, a baking sheet, and a knife.

You'll have enough ingredients to make about 6 servings of strawberry shortcake.

  1. Coat the strawberries. In a medium-sized bowl, stir together 4 cups of sliced strawberries and ½ cup of sugar. Set aside.
  2. Preheat. Preheat the oven to 425°F (215°C) and line a baking sheet with parchment paper.
  3. Mix the dough. In a large bowl, stir together 2⅓ cups of Bisquick baking mix, ⅔ cups of milk, 3 tablespoons of melted butter, and 3 tablespoons of sugar until a soft dough has formed.
  4. Bake. Drop the dough by rounded tablespoons onto the prepared baking sheet. Bake in the oven at 425°F (215°C) for 10-12 minutes or until golden brown.
  5. Cool. Remove the baking sheet from the oven and allow the biscuits to cool for a few minutes.
  6. Assemble. Split the shortcakes in half and add a layer of whipped cream, followed by sliced strawberries. Place the top half of the shortcake on top and top it with strawberries and more whipped topping. Serve immediately.

Serve your strawberry shortcakes with a dusting of powdered sugar and some extra strawberries! It would also be super delicious with some roasted berries or strawberry coulis! Enjoy!

💭 Tips & Notes

  • The macerated berries need at least 30 minutes with the sugar to make the juice that is optimal for serving with strawberry shortcake.
  • Sprinkle the dough with sugar before baking to add a nice and sweet sparkly topping!
  • These shortcakes are drop biscuits, so the size and shape will vary. If you want the biscuits to be more uniform in shape, you can roll out the dough and use a round cookie cutter to cut out the biscuits.
  • If you want to make homemade whipped cream instead of store-bought, check out my recipe forstabilized whipped cream or chantilly cream!
  • The biscuits will be tender when they first come out of the oven and could fall apart if you try to halve them while they are still hot. Letting them cool off for a few minutes (or completely cooling the shortcakes) will make them much easier to slice!
  • Alternatively, you can serve your Bisquick strawberry shortcake by breaking up a biscuit into a bowl, covering it with strawberries, and then adding a dollop of whipped topping on top.
  • Try out this same yummy recipe but with blueberries, raspberries, peaches, or a combination of fruit!

🥡 Storing

You'll want to enjoy this tasty treat immediately after preparing it. However, the biscuits can be made in advance and stored for later. Just keep them in an airtight container for a few days.

Store the berries in a separate container for up to 3-4 days. Alternatively, both the shortcakes and berries can be frozen for 2-3 months.

Bisquick is a baking mix, not just flour alone. It is made up of flour, salt, baking powder, sugar, and shortening. Essentially, it is very similar to self-rising flour with an addition of fat.

Ingredients

  • 4 cups strawberries (stems removed and sliced)
  • ½ cup sugar (for coating the strawberries)
  • 2⅓ cup Bisquick
  • cup milk
  • 3 tablespoon butter (melted)

Instructions

  • In a medium-sized bowl, stir together the sliced strawberries and ½ cup of sugar. Set aside.

  • Preheat the oven to 425°F (215°C) and line a baking sheet with parchment paper.

  • Drop the dough by rounded tablespoons onto the prepared baking sheet. Bake in the oven at 425°F (215°C) for 10-12 minutes, or until golden brown.

  • Remove the baking sheet from the oven and allow the biscuits to cool for a few minutes.

  • Split the shortcakes in half and add a layer of whipped cream followed by a layer of sliced strawberries. Place the top half of the shortcake on top and top it with strawberries and more whipped topping. Serve immediately.
